Over the past fifty years the expectations of the American dining public has changed in ways that no one could have ever expected. We are a country that has gone from living in the shadow of our Continental fore fathers to stepping out onto the world stage in our own right. The United States, with its innumerable blending (and clashing) of cultures has always been uniquely suited to becoming the forefront of gastronomic evolution, and in recent decades as a culture we have truly come into our own. And what an exciting time it is!

The remarkable aspect of American food is that we are able to draw from the entire World's pallet of flavors to combine and experiment in developing our brand of cuisine which is unique in and of it's self. Like blues, jazz and rock and roll; and the abstract expressionist painters of the mid twentieth century, we have combined culinary elements from around the world to form dishes that are at the very front of the evolution of food.

We at Adagio remain firmly committed to the tradition and techniques of the Italian classic food sense, and yet are more than willing to use the tools of Italy to expand the notion of what food, and the experience of eating it, can be. We are excited about the trend in American cuisine and are happy to be a part of the industry which is helping to usher in a new age of culinary appreciation.
